Ever put peanut butter in your burger?
I made this recipe (from Hallmark magazine) tonight and it was awesome! I used lime juice instead of lemon but kept all else the same. Charlie even loved it--jalepenos and all! I toasted some kaiser rolls and dressed the burgers with lettuce & pickles--yum! You really should try it!

Turkey Satay Burgers

Ingredients:

6 tablespoons peanut butter
1-3/4 pounds ground turkey
6 scallions, minced
6 tablespoons minced cilantro
6 tablespoons unseasoned dried bread crumbs
1 tablespoon grated lemon zest (optional)
3 tablespoons lemon juice
2 tablespoons minced pickled jalapeƱos
1/2 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons vegetable oil

1.Place the peanut butter in a medium metal bowl and set the bowl over a pot of boiling hot water. Stir the peanut butter just until it's just barely liquid, about 30 seconds.

2.Remove from the heat. Add the turkey and mix well to evenly distribute the peanut butter.

3.Sprinkle the scallions, cilantro, bread crumbs, lemon zest (if using), lemon juice, jalapeƱos, black pepper and salt evenly over the turkey and mix well. (Try not to mix the turkey any more than is absolutely necessary, because this can toughen the meat.)

4.Form the mixture into 6 patties. In a large nonstick skillet, heat the oil over medium heat. Add the patties and cook for 3 minutes on one side. Flip the burgers over, cover and cook until opaque throughout, about 6 minutes.

Okay, this sounds REALLY good, but step #1 seems like so much work! I love to cook and try new things. Was it very hard and time consuming?

Hey Allyson! It didn't take any time at all! You could even probably melt the peanut butter in the microwave if you wanted too. I haven't tried it though. It's definitely worth trying!
